Accurate Quantification of Anthocyanin in Red Flesh Apples Using Digital Photography and Image Analysis

Red fleshed apples (Malus × domestica Borkh.) differ in colour intensity between cultivars, seasons and sites. The objective of this study was to develop a procedure for predicting anthocyanin content from digital images flesh discs. Flesh cylinders uniform were excised, scanned their colours determined the R, G B L*a*b* spaces. Anthocyanin also quantified chemically. A calibration line constructed predict discs varying scan or photograph studio outdoors. concentration linearly related logarithms G, L*. From these relationships, disc predicted, pixel by pixel. Colour corrections applied using reference chart included all images. Finlayson algorithm most effective correcting parameter obtained flatbed scanner.
